Superfood bars: A powerhouse of nutrition

Superfood bars are the ultimate grab-and-go snack, and making them at home ensures you know exactly what’s going into your body. These bars are packed with delicious superfoods like raw nuts, chia seeds, flaxseed, cacao, goji berries, pumpkin seeds, coconut and dark chocolate.

Sweetened naturally with dates, they’re free of added sugar, except for a hint in the dark chocolate, which you can skip if you prefer something less sweet.

Superfood bars ingredients:

  • 1 1/2 Cup (310g) Medjool dates, pitted (You can also use another sticky dried fruit, like figs or prunes)
  • 1 Cup (157g) almonds, pecans, or walnuts
  • 1/2 Cup (26g) unsweetened coconut flakes (You can also use another similar nut or seed)
  • 1/2 Cup (76g) raw pumpkin seeds (You can also use another similar seed)
  • 1/4 Cup (28g) goji berries, dried cranberries, raisins or other dried fruit
  • 1/4 Cup (35g) ground flaxseed
  • 1/4 Cup (25g) cacao powder (You can also use unsweetened cocoa powder)
  • 2 Tablespoons (24g) chia seeds
  • 1-2 Tablespoons water, so the mixture will hold together
  • 1/2 Cup (4 oz) chopped dairy-free dark chocolate, melted (optional)
  • Any of your favorite superfoods for sprinkling on top (This is optional and you can use ingredients like cacao nibs, chia seeds, chopped nuts, coconut, hemp seeds, goji berries, pumpkin seeds, etc.)

Preparation:

  1. Place the dates and nuts into a food processor or blender and blend until finely ground. Add the chia seeds, coconut, flaxseed, pumpkin seeds, goji berries and cacao powder, and pulse until well blended. If needed, add water one tablespoon at a time until the mixture holds together when pressed between two fingers.
  2. Scoop the superfood mixture into a parchment-lined 8×8 square pan. Use your hands or a flat-bottomed glass to evenly press the mixture into the pan.
  3. Melt the dark chocolate and spread it evenly across the top of the bars.
  4. Sprinkle extra seeds, berries or nuts across the melted chocolate, cover and chill until set for at least several hours.
  5. Cut and serve once set.

Smoothies: A nutrient-packed meal in a glass

Smoothies are a fantastic way to pack in fruits, veggies and superfoods, but it’s easy to overdo it on the sweetness. (Related: Easy, healthy, tasty: Energizing smoothie recipes with high nutritional value.)
